Superfoods Seed & Nut Granola

This grain-free granola is a powerhouse of nutrition. Loaded with nuts, seeds and other superfoods, it lends a perfect crunch to yogurt parfaits or as a quick snack. Almonds, walnuts and pecans are a great source of healthy fats and fiber. Sunflower and pumpkin seeds are loaded with key B vitamins for energy and Vitamin E and C. Flaxseed adds protein and many essential minerals. This recipe is calorie-dense to keep the serving size reasonable (1/4 cup).

Sustained Energy and Clarity

Protein, healthy fats and key vitamins and minerals give the body and brain a boost.

Ingredients

  • 1 cup sliced, raw almonds

  • 1 cup raw pecans (roughly chopped)

  • 1 cup raw walnuts (roughly chopped)

  • 3/4 cup raw pumpkin seeds

  • 3/4 cup raw sunflower seeds

  • 1/2 cup ground flaxseed

  • 1/2 cup unsweetened coconut flakes

  • 2 teaspoons ground cinnamon

  • 1/2 tsp. sea salt

  • 1/4 cup coconut oil, melted

  • 2 tablespoons honey or sweetener of choice - adjust to taste

Instructions

  1. Preheat oven to 300F. Line a baking sheet with parchment paper.

  2. In a large bowl combine all the ingredients; stir until well combined.

  3. Spread the granola mix evenly over the lined baking sheet.

  4. Bake for 30 minutes, stirring after 15 minutes.

  5. Let cool completely. Store in an airtight container for up to 2 weeks.

    Suggested Serving: sprinkle granola over fresh or frozen fruit and (low-sugar) Greek yogurt.
