Sweet Corn with Seasoned Butter

Nothing tastes like summer more than freshly picked sweet corn. This simple recipe kicks up the flavor of plain corn. Parsley adds a touch of color and freshness while chili and cumin add savory notes to balance out the natural sweetness of the corn.

Ingredients

  • 8 ear of fresh sweet corn

  • 6 Tbsp. butter softened

  • 1 Tbsp. minced fresh parsley

  • 1 tsp. chili powder

  • 1 tsp. garlic salt

  • 1/2 tsp. cumin

Instructions

  1. Remove the husk and silk from the sweet corn.

  2. Boil or grill corn until tender, about 7-10 minutes.

  3. While the corn is cooking, combine the other ingredients.

  4. After finished cooking, let the corn cool for a few minutes.

  5. Spread seasoned butter over corn just before serving.

    Variations: mix up the seasonings with your favorite flavors: try chipotle pepper for a smoky flavor or cayenne for a kick. Try different fresh herbs like thyme, basil or rosemary.
