Loaded Sweet Potato Skins

A perfect snack for a party or as a light lunch, these loaded sweet potato skins are nutritious and delicious. This recipe is full of flavor and whole ingredients. Add your favorite protein and toppings for a truly original recipe.

Sweet potatoes, spinach, garlic and cheese

Ingredients

  • 4 small sweet potatoes (similar in size and shape)

  • 2 teaspoons olive oil

  • 3/4 cup yellow onion, diced

  • 2 teaspoons minced garlic (2 cloves)

  • 8 oz. fresh baby spinach, roughly chopped

  • ¼ cup plain Greek yogurt

  • ½ cup Monterey jack cheese, shredded

  • ½ teaspoon sea salt

  • ¼ teaspoon black pepper

  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with aluminum foil.

  2. Scrub the sweet potatoes and pierce 3-4 times with a fork. Brush with olive oil.

  3. Bake for 45-60 minutes or until just tender. Remove from oven, carefully slice in half and let cool 10 minutes.

  4. While potatoes are baking, heat remaining olive oil in skillet and cook the onion and garlic until translucent. Add the chopped spinach and cook for a few minutes until the spinach is wilted. Set aside for later.

  5. When the potatoes are cool enough to handle, gently scrape most of the potato out of the skin and into a large bowl.

  6. Mash the potatoes with a fork and add the Greek yogurt and spinach mixture. Season with salt and pepper.

  7. Divide the potato mixture between the 8 skins and carefully refill. Top with cheese. Place back in the oven for 10-15 minutes or until the potatoes are hot and the cheese is melted.

  8. Top with sliced green onion and serve.

Tips: Add 1 cup shredded chicken, turkey or cooked beans for extra protein at step 6.

Try baking the raw and filled potatoes in an air fryer. Adjust time and temperature for your specific model.
