Lemon Herb Dressing

Perfect for summer salads and bowls, the lemony-herb dressing has all the flavors of the Mediterranean. Choose fresh herbs like thyme, rosemary, oregano, marjoram or basil. Dried herbs work well in this recipe, too.

Fresh, lively flavors

Fresh garlic, fragrant herbs, tangy lemon and peppery olive oil blend for a delicious dressing.

Ingredients

  • 1/4 cup extra virgin olive oil

  • 3 Tablespoons fresh lemon juice from half a lemon

  • 1 clove garlic, minced or 1 tsp garlic powder

  • 1 Tablespoon fresh herbs like rosemary, thyme, oregano, marjoram or basil, minced or 1 teaspoon dried herbs.

  • 1 teaspoon Dijon mustard

  • salt and pepper to taste

Instructions

  1. Mix the freshly squeezed lemon juice with the fresh or dried herbs, minced garlic and Dijon mustard.

  2. Whisk in olive oil until well blended. Season with salt and pepper.

  3. Serve immediately or refrigerate dressing promptly for up to a week. Bring back to room temperature and whisk before serving.
