Apple Cranberry Salad with Feta and Walnuts
Salads are often served at summer meals, but this salad combines favorite autumn flavors: apples, cranberries and maple syrup. Pair with a soup or sandwich for a quick meal.

Ingredients
For the salad
5 oz. mixed greens, pre-washed
1 large red apples, cored and diced
1/4 cup dried cranberries
1/4 cup Feta (goat) cheese, crumbled
1/3 cup walnuts, chopped
For the dressing
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 teaspoon maple syrup
1 teaspoon Dijon mustard
salt and pepper, to taste
Instructions
In a medium skillet, toast the walnuts over medium heat. Stir constantly until lightly browned. Transfer to a bowl to cool.
Make the dressing by whisking the olive oil with the cider vinegar, maple syrup and Dijon mustard. Season with salt and pepper.
Tear or cut the greens into bite-sized pieces. Place into a large bowl. Add the other salad ingredients to the greens.
Drizzle the dressing on top and toss to coat. Serve immediately.
