Italian Marinated Grilled Chicken

Marinated grilled chicken is simple to make and versatile for nearly any recipe that uses cooked chicken. For even cooking, trim or pound the chicken breasts into even thickness. This will ensure fully cooked chicken without being dry.

Make a large batch of Italian Marinated Chicken breast to use in dozens of different recipes.

Ingredients

  • 1 lb. boneless, skinless chicken breast

  • 1/2 c. Italian salad dressing

  • 2 Tbsp. low sodium soy sauce (or coconut aminos)

Instructions

  1. Trim any fat or cartilage from chicken breasts. Reduce the thickness of the breasts by cutting horizontally across or pound to even thickness (about 1 inch thick)

  2. Mix the salad dressing and soy sauce (or coconut aminos) together in a large bowl. Add the chicken breast and stir to coat. Cover bowl and refrigerate for 30 minutes up to 2 hours. The longer the chicken marinates, the more flavor it will have.

  3. When ready to cook, preheat a grill, grill pan or contact grill to medium high heat. Spray with non-stick cooking spray.

  4. Carefully place each chicken breast on the grill. Allow to cook halfway through (about 2-3 minutes). Turn the chicken and cook until it has reached an internal temperature of 165 F for food safety.

  5. Let the chicken rest for 2-3 minutes before serving.

  6. Refrigerate cooled chicken for up to 4 days OR wrap tightly in freezer bags (remove air) freeze up to 6 months.
